Il s&rsquo;agit \u00e9galement de promouvoir une alimentation saine, s\u00fbre, durable et accessible \u00e0 tous. Ces objectifs ont \u00e9t\u00e9 d\u00e9clin\u00e9s par la r\u00e9gion Occitanie dans la d\u00e9marche \u00abL\u2019Occitanie dans mon assiette\u00bb : une alimentation locale, bio et de qualit\u00e9 pour les lyc\u00e9ens.<\/p>\n\n\n\n<p>Toue l\u2019\u00e9quipe de la restauration collective, compos\u00e9e de 3 cuisiniers adh\u00e8re \u00e0 la d\u00e9marche du conseil r\u00e9gional qui vise \u00e0 atteindre 20&nbsp;% de produits de l\u2019Agriculture Biologique et 40&nbsp;% de produits locaux dans les cantines des lyc\u00e9es de la r\u00e9gion. Par l\u00e0, on entend des produits alimentaires originaires d\u2019Occitanie, avec une tol\u00e9rance de 100 km pour les exceptions qui ne sont peu ou pas produites en r\u00e9gion.<\/p>\n\n\n\n<p><strong>Aujourd\u2019hui, sur le lyc\u00e9e H2B 26&nbsp;% des produits sont bio et 30&nbsp;% des produits sont locaux. <\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"480\" height=\"640\" src=\"https:\/\/www.hdebalzac.fr\/wp-content\/uploads\/2021\/05\/presentoir-self-rotated.jpg\" alt=\"\" class=\"wp-image-4988\" srcset=\"https:\/\/www.hdebalzac.fr\/wp-content\/uploads\/2021\/05\/presentoir-self-rotated.jpg 480w, https:\/\/www.hdebalzac.fr\/wp-content\/uploads\/2021\/05\/presentoir-self-225x300.jpg 225w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/figure>\n\n\n\n<p>Toute l\u2019\u00e9quipe montre une grande satisfaction \u00e0 faire \u00e9voluer les habitudes vers une alimentation locale et bio, malgr\u00e9 les difficult\u00e9s engendr\u00e9es&nbsp;: co\u00fbt des produits plus \u00e9lev\u00e9, proc\u00e9dures d\u2019approvisionnement plus complexes, nombre de fournisseurs en augmentation.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Des apprenants associ\u00e9s \u00e0 cette d\u00e9marche en participant \u00e0 des commissions restauration <em>mises en place en 2020 par le chef Patrice Combe et la Directrice adjointe Julie Chavagneux<\/em> et qui font \u00e9merger de nouvelles propositions:<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>Un buffet de salades en libre service avec 100&nbsp;% de produits locaux,<\/li><li>Un menu v\u00e9g\u00e9tarien et unique pour tous  tous les vendredis midi,<\/li><li>petite faim\/petite assiette, grande faim\/grande assiette<\/li><li>Le choix \u00e0 chaque repas entre une prot\u00e9ine animale (viande ou poisson) ou v\u00e9g\u00e9tale (association c\u00e9r\u00e9ale plus l\u00e9gumineuse pr\u00e9par\u00e9e sur place).<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-gallery columns-1 is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\"><ul class=\"blocks-gallery-grid\"><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" width=\"870\" height=\"484\" src=\"https:\/\/www.hdebalzac.fr\/wp-content\/uploads\/2021\/02\/fruits-et-legumes-de-saison.jpg\" alt=\"\" data-id=\"3487\" data-full-url=\"https:\/\/www.hdebalzac.fr\/wp-content\/uploads\/2021\/02\/fruits-et-legumes-de-saison.jpg\" data-link=\"https:\/\/www.hdebalzac.fr\/?attachment_id=3487\" class=\"wp-image-3487\" srcset=\"https:\/\/www.hdebalzac.fr\/wp-content\/uploads\/2021\/02\/fruits-et-legumes-de-saison.jpg 870w, https:\/\/www.hdebalzac.fr\/wp-content\/uploads\/2021\/02\/fruits-et-legumes-de-saison-300x167.jpg 300w, https:\/\/www.hdebalzac.fr\/wp-content\/uploads\/2021\/02\/fruits-et-legumes-de-saison-768x427.jpg 768w\" sizes=\"(max-width: 870px) 100vw, 870px\" \/><\/figure><\/li><\/ul><\/figure>\n\n\n\n<p>Des mesures qui permettent de diminuer l\u2019impact carbone&nbsp;\u00e0 l&rsquo;initiative du Chef et de son \u00e9quipe:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Alternative aux prot\u00e9ines animales,<\/li><li>Diminution de la ration et de la portion de prot\u00e9ine animale mais libert\u00e9 de demande un suppl\u00e9ment, <\/li><li>\u00c9laboration des plats sur place \u00e0 partir de produits sains,<\/li><li>Lutte contre le gaspillage (affichage des objectifs et des r\u00e9sultats), <\/li><li>gestion des d\u00e9chets&nbsp;: table de tri&nbsp;avec s\u00e9paration du pain, des emballages, des d\u00e9chets alimentaires. Ces d\u00e9chets sont collect\u00e9s et valoris\u00e9s par la M\u00e9tropole de Montpellier.<\/li><li>\u00e9conomies de ressources (eau, \u00e9nergie, d\u00e9tergent) gr\u00e2ce \u00e0
